Everything that is cultivated is used in the kitchen to make preserves and preparations, processed by hand while fresh to maintain its high quality, nutritional value and genuine flavour.
Drawing inspiration from tradition and folk wisdom, we closely follow the seasonality of the products by rotating the crops.
Salento’s sun and wind, its especially healthy air filtered by the Mediterranean scrub and the two seas, and the indispensible hand of man make the difference.
Orange and lemon groves diffuse their fragrances, orchards generously offer up their fruits: figs, prickly pears, apricots, pomegranates, quinces, almonds and walnuts...
And while the wheat of Terre di Corillo is ground immediately and made into flour, to be used in the preparation of everyday foods such as bread, ‘orecchiette’, ‘frise’ and cakes, the vegetable gardens fill the table with a triumph of vegetables and staples: pink chickpeas, tomatoes, pumpkins, courgettes, beans, aubergines and many others. All these acting as a counterpart for the herbs, capers and wild rocket that grow spontaneously everywhere.
